Ingredient Notes

  • Rotisserie chicken: Using pre-cooked rotisserie chicken is a convenient option. Any kind of leftover chicken will work- leftover rotisserie chicken or leftover chicken breasts or thighs, but you can also cook and shred your own chicken at home.
  • Buffalo wing sauce: Adds the signature spicy buffalo flavor to the chicken. You can use any brand of buffalo wing sauce (my favorite is Franks) or make your own homemade buffalo sauce.
  • Ranch dressing: You can use store-bought ranch dressing or make your own at home. Provides a cool and creamy balance to the heat of the buffalo sauce.
  • Cheddar cheese: Shredded cheddar cheese is a classic choice for quesadillas, but you can use other types of cheese as well. Monterey Jack, pepper jack, or a Mexican cheese blend would also work well.
  • Bleu cheese: Adds a tangy and pungent flavor to the quesadillas. You can omit this ingredient if you’re not a fan of bleu cheese.
  • Flour tortilla: The recipe calls for 6-inch tortillas- they fit nicely in the air fryer, but you can use larger tortillas if you prefer. Corn tortillas can also be used as a gluten-free option.
  • Cilantro: Chopped cilantro adds a fresh and herbaceous flavor to the quesadillas. You can use other herbs like parsley or basil if you prefer.
  • Ranch for dipping: You can use any type of ranch dressing you prefer or try a different dipping sauce, like sour cream, guacamole, or salsa.

Variations and Substitutions

There are many ways to customize the Air Fryer Buffalo Chicken Quesadillas recipe to suit your taste preferences or dietary restrictions. Here are some variations and substitutions you can try:

  • Milder: Use less buffalo sauce or find a mild version. The different heat levels are typically marked on the bottle.
  • Spicy buffalo chicken quesadilla: Add more buffalo sauce or diced jalapeños to increase the heat level.
  • Different cheese: Use a different type of cheese, such as pepper jack, Monterey jack, Colby jack, mozzarella cheese, or queso fresco.
  • Add vegetables: Add some sliced bell peppers, onions, or mushrooms to the filling for extra flavor and nutrition.
  • Lower-carb: Use low-carb tortillas, such as almond flour or coconut flour tortillas, or wrap the chicken mixture in lettuce leaves instead of tortillas.
  • Gluten-free: Use gluten-free tortillas instead of wheat tortillas, and make sure your buffalo sauce and ranch dressing are also gluten-free.
  • Vegetarian: You can make this recipe vegetarian by substituting the chicken with a vegetarian protein, such as black beans or grilled portobello mushrooms. You can also use a plant-based cheese substitute for the cheddar and bleu cheese.

Tips

  • Don’t overfill the tortillas: Be careful not to overstuff the tortillas with filling, as it can cause them to break or leak in the air fryer. Use about ¼ cup of filling for each tortilla, and spread it out evenly.
  • Use a good quality buffalo sauce: The flavor of the buffalo sauce will make or break this dish, so choose a brand or recipe that you really enjoy. Taste-test the sauce before adding it to the chicken to make sure it’s the right level of spiciness and tanginess.
  • Preventing sticking: To prevent the quesadillas from sticking to the air fryer basket, spray the basket with non-stick cooking spray, and line it with parchment paper or an air fryer liner.
  • Preheat the air fryer: Preheating the air fryer can help the quesadillas cook evenly and become crispy. Follow the manufacturer’s instructions for the preheating time when necessary.
  • Check the quesadillas often: Keep an eye on the quesadillas as they cook (especially the first time cooking them), and flip them over halfway through the cooking time to ensure that both sides are evenly browned and crispy. Each air fryer cooks slightly differently.
  • Let the quesadillas cool before cutting: Give the quesadillas a few minutes to cool and set them before cutting them into wedges. This will prevent the cheese from oozing out and make them easier to handle.
  • Use toothpicks: If you find the top opening up because of the circulation of the air you can insert a toothpick to hold it down.
