Ingredient Notes

A marble table with a scoop full of almonds, a bowl of olive oil, and a bowl of salt.
  • Almonds: Make sure your almonds are fresh for the best results.
  • Olive Oil or Melted Butter: Using a fat gives the almonds a nice sheen and toasty flavor when cooking. If using melted salted butter you can omit salt when roasting.
  • Salt (optional): Salt is optional when toasting. I recommend using fine sea salt, kosher salt, or Himalayan pink salt. Then you can garnish with a little added coarse flake salt when serving if desired.

Variations and Substitutions

  • Other Nuts: You can use any nut you like. Pecans, walnuts, peanuts, and pistachios are great other options. You can also roast a mixture of nuts.
  • Smoky & Spicy: Add smoked paprika, chili powder, and a pinch of red pepper or cayenne pepper.
  • Garlic: Toss with olive oil or butter and some garlic powder for garlicky roasted almonds.
  • Cinnamon Sugar Sweet Nuts: Make them crunchy air-fryer cinnamon almonds by coating them in cinnamon and white sugar or brown sugar.
  • Try other flavored oils you enjoy: These are delicious with a little sesame oil or flavored olive oil.
  • Add honey or maple syrup as a sweetener and air fry with a teaspoon of salt.

Tips

  • Raw Almonds can be bought in bulk and stored in the freezer for 18 to 24 months.
  • Fry in a single layer: You want to place almonds in a single layer with room for hot air to circulate. Most air fryers will accommodate the cup and a half, however, sizes vary.
  • Almonds, or any nuts for that matter, can go from done to burnt really quickly. So stay with them and check on them every 2 minutes. They will be a little darker in color, have a nutty aroma, and are still a little soft in the center. They will harden back up and become crunchy once cooled.
  • Don’t store them in an airtight container until they are completely cooled.
