Cheesy Green Chile Bread is cheesy, gooey, bubbly and delicious! It really is about one of the best things you’ll ever eat. Just five simple ingredients combined, and you’re on your way to your new favorite bread!

Who doesn’t love a hot, soft-in-the-middle-and-crunchy-outside, cheesy delicious bread! I know it’s what I dream about at night!

This bread goes delicious with just about everything. From soups to chili, like white chicken chili, or served with a salad to make a complete meal. Or, heck, just make a whole meal on this cheesy bread, and I certainly won’t judge a bit!

The first time I made a cheesy mayo bread like this was when I first got married. Some sweet friends of ours made it at a party and shared the recipe with me. Her recipe didn’t have any green chilies though. So this version is just kicked up a notch!

It really is the most scrumptious thing you will ever bite into. So I am giving you a fair warning here! Very addictive – contains much yumminess ahead!

Ingredients

  • French Bread: Nice and crusty on the outside and soft on the inside makes this the perfect bread!
  • Butter: Butter makes everything better right. I use salted butter, but you can certainly use unsalted if that is what you have on hand. It’s creamy and buttery and melts into the bread nicely.
  • Mayonnaise: Well this is the secret ingredient that adds a little wow factor! Never had cheesy mayo bread. Then, you must start now.
  • Shredded Cheddar or Mexican Blend Cheese: Cheese adds that creamy sharp cheddar gooeyness you just need on top of bread.
  • Canned Green Chiles: This gives that green chile flavor that puts this bread over the top.

How to Make Cheesy Green Chile Bread

Step 1 | Cheesy Green Chile Mixture

  • In a medium bowl, soften or melt butter in the microwave. I usually have it somewhere in between, as you see in the first picture above. Start with 30 seconds and that should be good. Depending on how cold your butter and the strength of your microwave, you may need a little longer.
  • Then, add to the bowl the mayo, green chiles (juice and all), and shredded cheese. Mix them until combined.

Step 2 | Slice and Coat Bread

  • Slice the bread in half lengthwise and then spread the mixuture evenly onto each side.
  • Place on lined baking sheet with the green chile mixture side up.

Step 3 | Bake

  • Bake until bubbly and gooey delicious!

Substitutions and Variations:

  • Bread Substitutions: This is also really delicious on Cuban bread, a sourdough loaf, or even a baguette.
  • Want to spice it up more: Use hot chiles or even jalapenos I have used fresh, pickled, and even chopped canned jalapenos. All are delicious. You could even sprinkle in a little taco seasoning too!
  • Add some fresh garlic or other fresh herbs.
  • Change up the cheeses: White cheddar, Mexican blend, taco blend, and sharp cheddar are all good. You can also try mozzarella, parmesan, or provolone. The sky is the limit.

  • Do NOT drain the diced chiles!
  • Keep an eye on the bread while it is cooking. You are cooking at a high temperature so it cooks fast and ovens vary.

Storage and Reheating:

Storage:

Since this has mayo and cheese any leftovers will need to be stored in the refrigerator. It can be stored for about 3 days.

Reheating:

You can warm this up in the microwave. I usually take a slice and start with 10-second intervals. If you over microwave it, it can become hard.

You can also put it back in the oven at 350° and heat it until warmed through. The time will depend on how large the piece is.

Ingredients 

  • 1 loaf french bread
  • ½ cup butter, softened
  • cup mayonnaise
  • 1 cup cheddar cheese
  • 4 ounces diced green chilies , canned with juices

Instructions

  • Preheat oven to 500°. Line a baking sheet with parchment paper or a silicone baking mat (optional for easy clean up).
  • In a medium-sized bowl mix together well-softened butter (you can even use melted butter), mayo, canned green chilis (do not drain), and shredded or grated cheese until combined.
  • Cut french loaf in half, lengthwise, and spread the mixture evenly on each half. Place on a baking sheet with the cheese mixture sides facing up.
  • Bake for 5 minutes then turn to up broil until bubbly and golden brown.
  • Remove from oven. Carefully slice and enjoy!

Notes

* Servings will depend on your french loaf size. My bakery makes a pretty long loaf about 18 inches. My slices are about 2 ¼ wide.
