Chicken and Dumplings Casserole is a quick and easy comfort food dish. It’s ultra-creamy with all the taste and texture of chicken and dumplings without any of the hard work!

This casserole recipe is the perfect dish to prepare for potlucks, to take to a friend, and to make for dinner any night of the week. It’s a one-dish wonder the whole family will love!

Honestly, you may never make chicken and dumplings any other way again. This chicken casserole with dumplings is about as easy as it gets!

Growing up, my granny made about the best chicken and dumplings you could put into your mouth! And there is a time and place for homemade dumplings that is for sure.

But a busy weeknight or any day you want a quick meal on the table you just may not have the time to put all that together. With these chicken and dumplings made in the oven, you get all that flavor with not a lot of work.

Pure comfort food served easy casserole-style!

Ingredients

You don’t need a lot of fancy ingredients to make this oven-baked chicken and dumplings recipe!

  • Butter: Real butter adds so much flavor and that buttery goodness!
  • Chicken: Make it easy by using a store-bought rotisserie or see my tips below on other easy ways to cook it.
  • Self-Rising Flour: This keeps it easy and you need the leavening agents included in the flour for this recipe. However, if you don’t have self-rising keep scrolling down and I will show you how to do it. You will need baking powder and salt.
  • Milk: Milk adds a creaminess and creates the dumpling dough along with the flour.
  • Poultry Seasoning: Seasoning to add flavor and give you that cooked all-day chicken taste.
  • Kosher Salt: A little salt for taste.
  • Black Pepper: A subtle spice for flavor.
  • Chicken Broth: Liquid for the sauce and also more flavor.
  • Cream of Chicken with Herbs: This gives that thickening to the sauce. I also love the flavor this gives the sauce. However, if you don’t have it on hand regular cream of chicken will work too.

How to Make Easy Chicken and Dumplings Casserole

Making chicken and dumplings in the oven is super easy and fast. Takes a few minutes to put together and cooks in 35 minutes!

  • Preheat oven to 375°. Place butter in microwave/oven safe dish and melt butter in the microwave.
  • Prepare chicken: You can either use cooked chicken, leftover chicken, or rotisserie chicken. I often make mine with this Instant Pot Chicken Recipe.

  • Combine Dumpling Mixture: In a medium bowl mix together flour, milk, poultry seasoning, and salt & pepper. Then pour evenly over the chicken. DO NOT MIX or STIR.

  • Combine creamy soup mixture: In the same bowl, you used to mix the flour (fewer dishes to wash), mix together the cream of chicken soup and chicken broth. Pour evenly over the dumpling mixture. DO NOT MIX or STIR.

  • Bake: Place the baking dish in a preheated 375° oven and bake for 30 to 40 minutes or until the filling is bubbly and the top is golden brown. Let it sit for 5 minutes before serving. This allows it to set.

Tips

  • Use a rotisserie chicken to make this super quick and easy. Anywhere from 3 to 4 cups of chicken works well in this dish.
  • Be sure to use self-rising flour.
  • Don’t stir anything when layering in the baking dish! I promise it will all come out perfect! It’s just like when you make a cobbler!
  • If you are watching sodium omit the salt and use low sodium chicken broth.

Substitutions and Variations

  • Add celery, carrots, and/or onions to a saute pan with the butter and cook until soft. Make this the bottom/butter layer. No need to microwave to melt butter.
  • Add Veggies: Add in 1 cup of frozen green peas, carrots, or a veggie medley with the chicken layer.
  • To give this a pot pie flavor: add a can of drained veg-all and use a can of cream of potato soup in place of the cream of chicken.
  • Replace cream of chicken and herbs soup with regular cream of chicken if you do not have it on hand. You could also use cream of mushroom or celery, as well.

Frequently Asked Questions

How to cook chicken breasts for a casserole.

Saute: Place in a saute pan with 2 tablespoons of butter and saute until chicken is cooked through, juices run clear but not overcooked. The cook time can depend on the size of chicken breasts but a good rule of thumb is 5 to 7 minutes.

Boil: Place chicken in boiling water for 20 minutes.

Bake: Bake on a sheet pan at 400° for 20 minutes or until juices run clear.

Instant Pot Chicken Breasts (fresh and frozen): Cooking chicken in the IP is quick and makes the chicken so flavorful. It is great for food prep.

How does this make dumplings?

The simplicity of this recipe is that you do not have to roll out dumplings. This recipe doesn’t actually make a dumpling, but it creates a layer that tastes and has the texture just like a dumpling will! Without all the work!

What if I don’t have self-rising flour?

You can use 1 cup all-purpose flour, 1 ½ teaspoon of baking powder (make sure this is not expired), and ¼ teaspoon of kosher salt -Whisk all this together and use it in place of self-rising flour.

Can I make this ahead of time?

I really don’t recommend making this ahead of time. However, you can make your chicken ahead and shred or chop it up and store it in the refrigerator or freezer to pull out for easy prep.

Storage and Reheating

Storage:

Cover with foil or plastic wrap or place in an air-tight container and store in the refrigerator for 3 to 4 days.

Reheat:

To reheat individual servings, place desired amount on a microwave-safe dish and reheat. Start with 1 minute and stir. Then add 30-second intervals until heated to your liking.

Freeze:

I would only recommend freezing this after baking. We never seem to have enough leftovers to get to this stage. It’s really so easy to throw together you don’t need to make it ahead of time. Remember to save time you can always make the chicken in advance to keep it easy.

However, if you want to freeze for later:

Cover tightly with plastic wrap and foil, and place in the freezer for up to 3 months. When you are ready to use it, remove it from the freezer and place it in the refrigerator overnight to thaw. Bake for 20 minutes or until warmed through. You can also scoop into individual servings and then microwave.

What to serve with Oven Baked Chicken and Dumplings

Serve this easy casserole with southern-style green beans, collard greens, or even a nice 1905 salad.

Ingredients 

  • ½ cup butter, melted
  • 3 to 4 cups chicken, cooked, chopped or shredded
  • 1 cup self rising four
  • 1 cup milk
  • ¼ teaspoon poultry seasoning
  • ½ teaspoon kosher salt, or to taste (optional)
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 (10.75 ounce) can condensed cream of chicken soup with herbs

Instructions

  • Preheat oven to 375°.
  • Place butter in a 9 x 13 casserole or baking dish and melt in the microwave in 30-second intervals until melted. (about 1 minute)
  • Place shredded or chopped chicken on top of butter spread evenly in the bottom of the baking dish.
  • In a mixing bowl combine flour, milk, poultry seasoning, and salt & pepper. Pour evenly over chicken (DO NOT MIX OR STIR IN).
  • In the same mixing bowl combine condensed chicken soup with herbs and chicken broth. Pour evenly over the flour mixture (DO NOT MIX OR STIR IN).
  • Place in oven and bake for 35 to 45 minutes. Let rest for 5 to 10 minutes before serving.

    Made this last night with a rotisserie chicken.
    Sauteed chopped celery, carrot and onion in the stick of butter until tender. Then added 1/2 bag of frozen peas.
    Followed the rest of the recipe using cream of mushroom soup as thatโ€™s what I had.
    This was easy, comforting and delicious!!
    It will definitely be made again.
    The most amount of time was spent pulling all the meat off the chicken. Well worth it !!

    Wow was this amazing ! I added some frozen corn on the bottom with the chicken ! My picky husband loved it and Iโ€™ll be making this on a regular basis . Itโ€™s the best way to eat dumplings. Itโ€™s truly comfort food and somewhat reminiscent of thanksgiving when my husband mixes mashed potatoes with Turkey, corn and gravy ! Just amazing ! Thank you !
