If you need a simple, flavorful quiche that works for brunch, meal prep, or a light dinner, this Crustless Spinach Quiche is it! Fresh spinach, melty cheese, and a creamy egg filling come together without the fuss of a crust. It’s naturally gluten-free, low-carb, and always a hit at the table!
When I’m planning a brunch—whether it’s for Easter, a baby or bridal shower, or just a special gathering—I always like to include at least one dish that’s lower in carbs and naturally gluten-free. There’s always someone at the table who appreciates having a lighter option, and I want to make sure everyone can enjoy something delicious without feeling like they’re missing out.
That’s exactly why I developed this crustless spinach quiche. It skips the crust but doesn’t skimp on flavor—the eggs bake up light and fluffy, the spinach adds freshness, and the Colby Jack cheese melts perfectly into every bite. A touch of basil brings in just the right amount of flavor to tie it all together.
It’s simple to make, easy to serve, and perfect for breakfast, brunch, or even a light lunch. Plus, it’s one of those dishes you can make ahead, so you have one less thing to worry about when hosting.
How to Make Crustless Spinach Quiche with Fresh Spinach
✱ Be sure to see the recipe card below for exact ingredients and full recipe instructions!
Step 1 | Prep and saute onions
Let’s begin by preheating the oven to 350℉ and greasing a 9-inch pie plate with oil or cooking spray.
Then, in a large skillet, warm the oil and add the sweet onion, cooking until it is translucent and starts to brown. This should take about 7-8 minutes.
Step 2 | Add garlic and spinach
Now, add the garlic and cook for about one minute or until it’s fragrant.
Then, stir in the chopped spinach in batches and cook until wilted. After, remove the pan from the heat and set it aside.
Step 3 | Combine egg mixture and bake
Next, whisk together eggs, milk, salt, and pepper in a medium bowl.
Stir in the cheese and the spinach mixture.
Then, pour it all into the greased pie pan and pop it into the oven. Bake for 45 minutes or until the edges brown and the center of the quiche is set.
Step 4 | Cool, slice, and serve
Finally, remove the pie dish from the oven and let it cool for about 10 minutes. Then, it’s time to slice, serve, and enjoy!

Spinach Quiche (no crust) FAQs
Watery quiche is not uncommon because spinach releases excess moisture while cooking. But as long as you cook it long enough and bake it at the right time, it should have a perfect texture. If the quiche is too watery, increase the bake time by a few extra minutes.
You can cover the quiche as it bakes if desired. Especially if the quiche has a crust, the aluminum foil will help keep the crust from burning.
Absolutely! Make it ahead and store it properly to be served at a later time. You can reheat it in the microwave or until warmed through in a preheated oven at 350°F.
Yes! If you’re using frozen spinach instead of fresh, use 10 ounces of frozen spinach. Just thaw it according to the package directions (a quick microwave thaw works great) and then drain it well in a colander while prepping the rest of your ingredients.
For best results, squeeze out any excess moisture using a clean kitchen towel or paper towels. This keeps your quiche from turning out watery. Super easy swap!
