Here in Florida, it may be the middle of spring, but it certainly feels like summer! The sunshine and heat call for weekend pool-side lunches with family and backyard cookouts with neighbors and friends. These delicious chicken burgers are the perfect lunch or dinner for a day spent in the spring sun.

Plus, they are quick and simple to make! Sadly, chicken burgers aren’t the most popular burger choices when compared to ground turkey, beef, salmon, or veggie burgers. Maybe it’s because of how they can easily be overcooked and have an unpleasant dry texture.

But with this easy-to-follow recipe, you won’t have to worry about dry chicken patties. And they are sure to change your mind about chicken burgers– they are juicy and packed with flavor!

Ingredient Notes

  • Rolls: You’ll need a few of your favorite burger rolls. Use brioche buns, Hawaiin rolls, or whatever you’d like.
  • Toppings: Collect all of your preferred burger toppings! I suggest a piece or two of Batavia or Boston lettuce, juicy sliced tomatoes, tangy red onion, and creamy mayonnaise.
  • Ground chicken: Form the juicy chicken patties with high-quality ground chicken and delicious flavor enhancers.
  • Onion: Add thinly diced yellow onion to the patty mixture for texture and flavor.
  • Garlic: Boost the chicken patty flavor with a fresh garlic clove, minced. Use garlic powder as a substitute if necessary.
  • Bread crumbs: Include bread crumbs in the patty ingredients to help bind them together and give them a more tender texture. Use classic unseasoned or panko bread crumbs.
  • Egg: One large egg will be the glue that holds all the patty ingredients together. For an egg-free party, use mayonnaise or sour cream instead.
  • Salt and pepper: Season the tasty chicken patties with a pinch of salt and freshly ground black pepper.
  • Dried herbs: Add a fresh flavor to the patties with dried parsley and thyme. If preferred, use another combination of dried herbs, like oregano and basil.
  • Paprika: Sprinkle paprika into the chicken mixture for a hint of smokiness, or use hot paprika for subtle spice.
  • Oil: Finally, you’ll need olive oil or another oil to pan-fry the patties.

Variations and Substitutions

  • Chicken Patty Sliders: This recipe makes four large patties or six medium-sized, so it should make around eight delicious chicken patty sliders. 
  • Toasted Buns: Toasting the rolls is a small step that makes a big difference! Nothing beats crispy hamburger buns. 
  • Spicy Chicken Burger Patties: Turn up the heat by adding hot paprika, cayenne pepper, a few drops of your favorite hot sauce, or chopped spicy peppers to the chicken patties.
  • Gluten-Free Chicken Burger: To make this recipe gluten-free, replace the ordinary burger roll with a gluten-free bun or omit the bread altogether. Burgers are still delicious with no bun or even a lettuce wrap. Also, use panko breadcrumbs or almond flour for the chicken mixture. And finally, don’t forget to double-check the other ingredients to ensure they have a GF label.

Step 1 | Mix the patty ingredients

First, set out a large bowl and mix all the ingredients for the chicken patties, except for the oil. Then, let it sit over the counter for about 10 minutes.

Step 2 | Form the chicken patties

Next, divide the burger mixture into four equal portions and shape them into patties, pressing the mixture well. If preferred, make six medium-sizer patties instead.

Step 3 | Cook the patties

Then, warm an iron-cast skillet over medium heat and add a little olive oil. Or, cook the chicken patties on an outdoor grill, setting the temperature to medium.

Next, add the chicken patties and cook both sides until the patties are fully cooked through. Keep in mind that the grilling or cooking time will vary depending on the thickness of your burgers. It should take around 8-10 minutes to cook both sides of the patty. If you’re using a meat thermometer, the internal temperature should reach 170 degrees.

When the burgers are done cooking, place them on a paper towel to absorb some of the excess greases, if preferred.

Also, if you’re using a large skillet, be sure to cook in batches to avoid overcrowding and uneven cooking.

  • Cook the Onions – Don’t forget to chop the onion into thick slices and cook it in the skillet before. The result will be a soft and brownish onion to add to your burger. 
  • Delicious Toppings– Make this chicken burger your own! Try adding creamy homemade or store-bought coleslaw, a crispy fried onion ring, sliced avocado, tangy Dijon mustard, a slice of provolone or cheddar cheese, sweet pickles, blue cheese crumbles, or feta cheese— YUM!
  • Even Cooking– To avoid shrinking and uneven cooking with the patties, it helps to press the center of the burger before grilling or frying. 
  • Mixing the Chicken Patties– Even if it’s messy, it’s best to mix and form the patties with your hands, applying light pressure. Wear gloves if preferred. 
  • Avoid Overmixing– Combine the chicken patty ingredients until they are evenly incorporated. Overmixing the patty ingredients will result in dense and chewy parties.

Can you make chicken burgers ahead of time?

Absolutely! Chicken patties are great for making ahead. You can make it one day before cooking and store it covered in the fridge. Before getting started with the rest of the recipe, let the mixture come to room temperature.

How do you prevent a dry chicken patty?

It’s very easy to dry out a chicken patty. So, for juicy burgers, you’ll need to carefully watch them as they cook. The average cook time for each side is around four or five minutes, but there are many variables that can affect how the patties cook, like the pan you use, the type of stove you have, and the thickness of the chicken patties.

The best way to ensure they don’t overcook is to use an instant-read thermometer. Insert it into the center of the patty. Once it reaches 170°F, it’s finished cooking!

Can you cook chicken burgers in the oven?

Sure! If you prefer, bake the chicken patties in a preheated oven set to 400°F for around 20 minutes, flipping halfway through.

How do you keep chicken burgers from falling apart?

The egg and bread crumbs should help the patty ingredients stick together. But you can also chill the patties in the refrigerator or freezer to ensure they don’t fall apart.

What to Serve with Delicious Ground Chicken Burgers

Storage

Refrigerate: If you have leftovers of these delicious burgers, you can store the patties in an airtight container in the refrigerator for up to three days.

Freeze for Long-term Storage: Hold onto the patties for a little longer by storing them in the freezer! Before or after cooking, store the patties by stacking them with wax or parchment paper between each to prevent sticking. Then, set them in a freezer bag or freezer-safe container and keep them for up to three months! 

To reheat the patties, let them thaw in the fridge overnight and bake, grill, or pan-fry the following day.

Equipment

Ingredients 

  • 4 burger rolls
  • 1 small head of lettuce, Batavia or Boston
  • 1 large tomato, sliced
  • cup mayonnaise
  • 1 red onion

Chicken Patties

  • 1.2 pounds ground chicken
  • ½ yellow onion
  • 1 garlic clove
  • 4 tablespoon breadcrumbs
  • 1 egg
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dry parsley
  • ½ teaspoon dry thyme
  • ½ teaspoon paprika
  • 1 tablespoon cooking oil

Instructions

  • Combine all the ingredients for the chicken patties leaving out the oil, in a large bowl. Set that aside to rest for 10 minutes.
  • Divide the chicken mixture into four large parts, then shape them into patties. Or make six slightly smaller (medium-sized) patties.
  • Heat the cast iron skillet or grill to medium heat and add a tablespoon of oil. Then, place the chicken patties in the pan and cook on both sides until the patties are thoroughly cooked, around 8-10 minutes. If you’re using a meat thermometer, the internal temperature should reach 170℉.
  • Assemble the chicken burgers with your favorite burger rolls and plenty of toppings and enjoy!
