Hamburger Vegetable Soup is a deliciously simple, healthy soup crafted with convenient frozen mixed vegetables. It’s a filling and nutritious soup loved by the whole family! Even better, it’s a one-pot recipe that takes only 30 minutes to make.
My Hamburger Soup recipe is great for a cozy and tasty meal that’s simple to make. It’ll warm you up and make everyone happy—it’s a real favorite in my family, and it is sure to be one in yours as well! Not to mention, it is a great way to get little ones and picky eaters to eat some veggies!

- Hearty Soup: If using the frozen soup mix it already has some potatoes included. But if you want to use potatoes you have on hand to bulk up the hamburger and vegetable soup. I suggest Yukon Gold potatoes or red potatoes. You can also use russet potatoes if you are okay with peeling them. Be sure to cut them in uniform size and cook until fork tender.
- Hamburger Soup with Pasta: Use a veggie mix without potatoes and add in orzo, small shells, macaroni, alphabet pasta, or another small pasta variety when you add the vegetables.
- Hamburger Soup With Rice: Add a cup of cooked white or brown rice to the pot of soup at the end. I like to precook my rice and scoop in individual servings so that the rice doesn’t puff up. You can also put the cooked rice in once soup pot has finished cooking.
- More Beefy Flavor: Worcestershire sauce is the secret ingredient in other beef and veggie soup recipes. It enhances the beef flavor and adds depth.
- Frozen and Fresh Vegetables: You can use a combination of fresh and frozen veggies for convenience and fresh flavor.

Step 1 | Brown the beef
Set a large pot over medium heat and add the ground beef, onion, and minced garlic, cooking for just 5 to 7 minutes or until the juices run clear.
Step 2 | Add remaining ingredients
Next, add the canned tomatoes and frozen veggies along with all remaining soup ingredients. Pour in the beef broth and tomato sauce, and add the Italian seasoning, Beef Better Than Bouillon, salt, pepper, garlic powder, onion powder, red pepper flakes, and bay leaf.
Step 3 | Simmer and serve!
All that’s left to do is let the soup simmer for 20 minutes, stirring every once in a while. After, remove the bay leaf and sprinkle parsley on top. Finally, enjoy the ground beef soup recipe with crusty bread to sop up all the goodness!

Ingredients
- 1 pound lean ground beef
- ½ cup chopped yellow onion
- 3 cloves garlic, minces
- 28 ounces canned diced tomatoes with juice
- 3 cups frozen vegetables for soup, (includes corn,peas, tomatoes, carrots, green beans, and potatoes)
- 3 cups beef broth
- 15 ounce can tomato sauce
- 2 teaspoons Italian seasoning
- 1 teaspoon Beef Better ThanBouillon
- ¼ teaspoon coarse kosher salt, or to taste
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon red pepper flakes
- 1 bay leaf
- 2 tablespoons chopped parsley
Instructions
- In a large pot, over medium heat, add the ground beef, onion, and minced garlic. Cook for 5 to 7 minutes or until the juices run clear.
- Add the tomatoes, vegetables, beef broth, tomato sauce, Italian seasoning, Beef Better Than Bouillon, salt, pepper, garlic powder, onion powder, red pepper flakes, and bay leaf.
- Simmer for 20 minutes. Stir occasionally.
