Step 1 | Make Whipped Cream Base

Grab a large mixing bowl and your trusty electric hand mixer (You can also use a stand mixer with the whisk attachment).

PRO TIP: Freeze your mixing bowl and beaters: Before you start whipping the cream, pop your mixing bowl and beaters into the freezer for about 15 minutes. Chilled equipment helps the cream whip up faster and creates a more stable texture.

Add the heavy cream, vanilla extract, and powdered sugar to the bowl. Now, let’s whip it all up until we reach those beautiful stiff peaks.

PRO TIP: Don’t overwhip the cream: Be careful not to overwhip it, as it can turn into butter. Once you reach stiff peaks, stop beating to maintain a creamy texture.

Step 2 | Make Condensed Milk & Cheesecake Base

Once the cream starts to reach stiff peaks (you’ll see it becoming thick and fluffy), it’s time to add the sweetened condensed milk and the amazing Philadelphia no-bake cheesecake mix.

We want all those flavors to come together, so whisk them in on a low speed until everything is nicely combined with the whipped cream.

Step 3 | Fold in Strawberries

Now, here’s the fun part! Grab a spatula or a large spoon and gently fold in those delicious diced strawberries. We want them evenly distributed throughout the ice cream base, so take your time and give it some love.

Step 4 | Freeze Strawberry Cheesecake Ice Cream

It’s time to pour this creamy goodness into a 9×5 inch loaf pan. Smooth it out, and then pop it into the freezer. That’s right; no ice cream machine is needed!

Let it freeze for around 6 hours, but depending on your freezer, it may take longer. Ensure the middle of the ice cream is firm before serving. (Then it’s ready to be devoured).

  • The Philadelphia no bake cheesecake mix can usually be found right next to the cream cheese or in your dairy aisle. However, if your local store does not carry it you can whip together 6 ounces of cream cheese and ¼ cup of powdered sugar until smooth as a substitute.

  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar
  • 14 ounce can sweetened condensed milk
  • 1 cup Philadelphia no bake cheesecake mix, (see notes for homemade version)
  • 1 cup diced strawberries

Instructions

  • In a large mixing bowl, use an electric hand mixer to whip the cream, vanilla, and powdered sugar into stiff peaks.
  • Once the cream begins to reach stiff peaks, add the sweetened condensed milk and cheesecake mix. Whisk the ingredients in on a low speed until they are combined with the whipped cream.
  • Gently fold in the diced strawberries with a spatula or large spoon until they are evenly distributed throughout the ice cream base.
  • Pour your ice cream mixture into a 9×5 inch loaf pan and allow the ice cream to set in the freezer for 6 hours, or until the middle of the ice cream is firm.
  • Serve and enjoy!
