It’s also an excellent recipe for meal-prepping for the week—just bake and wrap individual portions, and your family can grab and reheat them for a quick breakfast. Everything you love about breakfast is wrapped up into one easy dish! Plus, it’s the perfect way to use up those tater tots hanging out in the freezer.

This casserole has been a favorite in our house for a long time, and while I love the original version, it’s perfect for cleaning out the fridge—those unused cheeses, veggies, or leftover ham all work great. It’s so versatile—you can mix in pepper jack for a little heat or toss in whatever veggies you have on hand.   1. Preheat oven to 375℉ and spray a 9×13 baking dish with non-stick spray.
  2. In a large skillet over medium, crumble and cook the breakfast sausage for about 10 minutes or until cooked through. Drain off any excess grease on a paper towel-lined paper plate.
  3. Add the frozen tater tots, breakfast sausage, 1 ½ cups of cheese, onion, and bell pepper into the baking dish and toss together. 
  4. In a medium mixing bowl, whisk the eggs, milk, cream, salt, pepper, garlic powder, mustard powder, and cayenne (if using) until combined. 
  5. Pour the egg mixture over the tater tots in the baking dish. Top with the remaining ½ cup shredded cheese.
  6. Bake for 45 minutes till golden brown on top and middle is set. Let set up for 10 minutes before serving.

Ingredients 

  • 1 lb breakfast sausage, cooked, crumbled, and grease drained
  • 30 oz frozen tater tots
  • cups shredded cheese
  • ½ cup shredded cheese, or more if you want more on top
  • ½ cup onion, finely diced
  • ½ red bell pepper, finely diced
  • 8 eggs
  • ¾ cup milk
  • ¼ cup cream
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp dried mustard powder
  • tsp cayenne pepper, optional
  • fresh parsley , for garnish, if desired

Instructions
