These Biscoff Cookie Butter Muddy Buddies are a delicious twist on the classic snack mix—made completely peanut butter-free! Instead of the usual peanut butter and chocolate combo, this version features creamy cookie butter and white chocolate for a sweet, spiced coating that’s irresistibly good. With crunchy Chex cereal, crushed Biscoff cookies, and a hint of cinnamon, this no-bake treat is perfect for gifting, parties, or satisfying your snack cravings in just 30 minutes!
Place a piece of parchment paper on 2 rimmed baking sheets and set aside.
Evenly divide the powdered sugar, cinnamon, and Biscoff cookies into 2, gallon-sized zipper-top bags. (1 ¼ cups powdered sugar, ¼ teaspoon cinnamon, and ¾ cup cookie pieces into each bag) Shake each bag to mix and set aside.
In a microwave-safe bowl combine the white chocolate chips, cookie butter, and butter. Microwave in 15-second intervals, stirring in between. Cook until the mixture is fully melted and smooth, but don’t overcook. Add the vanilla extract and stir again. The mixture won’t be as thin or as smooth as the typical muddy buddy peanut butter and chocolate mixture because cookie butter and white chocolate melt differently.
Place the cereal in a very large mixing bowl and pour the chocolate mixture over the cereal. Use a rubber spatula to gently lift the cereal from the bottom to stir together, being careful not to crush or break the cereal. Stir till it is coated mostly evenly.
11 cups rice Chex or corn Chex
Add half the coated cereal into each prepared bag and seal. Shake each bag gently to coat the pieces in powdered sugar, tipping them upside down too.
Dump the muddy buddies onto the prepared trays. Gently spread them out evenly, breaking up any big clumps, and allow them to cool completely for about 10-15 minutes before transferring them to an airtight container or fresh zipper-top bags.

Storage: You can store this cookie butter puppy chow in an airtight container in the fridge for up to 2 weeks!
Freeze: When stored in the freezer, they are good for up to 3 months.
