Instructions
Preheat the oven to 350℉. Grease a 9-inch pie plate.
In a large skillet, warm oil and add onion, cooking until translucent and starting to brown; 7-8 minutes.
Add in garlic and cook until fragrant; about 1 minute.
Stir in spinach in batches and cook until wilted. Remove from heat and set aside.
In a medium bowl, whisk together eggs, milk, salt and pepper. Stir in cheese and veggies.
Pour into the greased pie plate. Bake for 45 minutes. Edges will start to brown, and the center will be set.
Cool for 10 minutes, slice and serve.
