Honey Roasted Almonds have an addictive combination of sweet honey, warm cinnamon, and crunchy nuts that will elevate your snack game instantly! These caramelized treats make perfect homemade gifts for holidays, hostess offerings, or care packages that friends and family will devour within minutes.
Line two separate cookie sheets or jelly roll pans with parchment paper, set aside.
In a medium size bowl, mix sugar and salt, set aside.
In a separate medium size bowl, heat honey in the microwave at power 50% for 40 seconds. Mix in cinnamon and stir. Mix in almonds and stir to coat thoroughly.
Place almonds on a parchment lined pan and spread them out.
Cook the almonds in the oven for 10 minutes, turning the almonds halfway through the cooking time.
Remove from the oven and let the almonds cool for only 4 minutes.
Add the warm almonds to the bowl of sugar and salt. Stir to coat all the almonds. Spread on the second parchment lined pan to cool completely.
Notes
When transferring the slightly cooled almonds from the pan to the sugar/salt bowl you need to work quickly because as the almonds cool they get super sticky and are difficult to remove from the parchment paper.
