11ouncebag of pecan sandies cookies(shortbread cookies), crumbled
8ouncescream cheesesoftened
¾cuppowdered sugar
½cupsour cream
1tspvanilla extract
1 ½poundsstrawberriessliced
8ounceswhipped topping(or to taste)

Instructions
Wash, dry, and remove stems from strawberries and slice, reserving one to garnish each top of parfait.
Crush cookies into a crumbled consistency. This can be done easily by hand or with a food processor.
In a bowl of a stand mixer, or with hand mixer beat well softened cream cheese and powdered sugar until smooth and fluffy, about 2 to 3 minutes. Add in sour cream and vanilla until combined and smooth.
Gather parfait cups of choice and layer crushed cookies, cream cheese mixture, sliced strawberries and then cool whip.
Garnish a few crushed cookie crumbles and a whole strawberry.
Notes
This makes 4 - 8 ounce glass dessert servings or 8 mini parfait or 4 ounce mason jar sized servings.You can make one layer of cookie crumb, cheesecake mixture, strawberries & whipped topping or divide up the into two layers as desired.If desired whipped topping can also be folded into cheesecake layer.
