Instructions
In a large mixing bowl, use an electric hand mixer to whip the cream, vanilla, and powdered sugar into stiff peaks.
Once the cream begins to reach stiff peaks, add the sweetened condensed milk and cheesecake mix. Whisk the ingredients in on a low speed until they are combined with the whipped cream.
Gently fold in the diced strawberries with a spatula or large spoon until they are evenly distributed throughout the ice cream base.
Pour your ice cream mixture into a 9x5 inch loaf pan and allow the ice cream to set in the freezer for 6 hours, or until the middle of the ice cream is firm.
Serve and enjoy!
Notes
The Philadelphia no bake cheesecake mix can usually be found right next to the cream cheese or in your dairy aisle. However, if your local store does not carry it you can whip together 6 ounces of cream cheese and ¼ cup of powdered sugar until smooth as a substitute.
Opt for ripe and juicy strawberries: Choose strawberries that are sweet, ripe, and juicy for the best flavor. It will make a noticeable difference in the overall taste of your ice cream.
For some extra strawberry flavor, you can add a tablespoon or two of strawberry Jell-O powder. You can also make your own healthy strawberry powder by blending freeze dried strawberries.
